Mini Hot Dogs and Mozzarella Bites

Making mini hot dogs and fried mozzarella served with mixed fruit. Using store bought crescent roll sheets or puff pastry sheets and you can make your own pigs in a blanket, and they taste so much better than the frozen kind! You can also assemble and freeze your pigs in a blanket to save and bake when you are ready. If you can’t find the crescent rolls in sheets just buy the regular roll dough and press the perforations together.

Recipe Mini Hot Dogs

Ingredients:
  • 8 Hot Dogs 
  • 1 Canister Crescent Roll Dough (In Sheets) 
Instructions: 
Preheat oven to 400.
Cut each hot dog into four pieces.
Using a sharp knife, cut pastry into squares to wrap around each piece. (Don’t make the pastry too thick, it will puff up when baked.)
Set all hot dogs on a baking sheet an inch apart.
(If freezing, place in freezer on the baking sheet. When frozen transfer to a freezer zip lock bag.)
Bake in middle of the oven for 10-12 minutes (15-20 if frozen).

Recipe Mozzarella Bites

Ingredients:
  • 8 Ounces Fresh Mozzarella Bocconcini or a Ball of Fresh Mozzarella cut into 1/2-1 Inch Chunks 
  • 2 TBSP Flour 
  • Egg White from 1 Egg Mixed with 2 TBSP Water 
  • 1/2 Cup Dried Bread Crumbs 
  • 3/4 Cup Canola Oil (for frying) 
Instructions:
Set up three dipping bowls: one with flour, one with egg white wash, one with bread crumbs.
Dip each piece of mozzarella first in flour, followed by egg and finally bread crumbs.
Set on a baking sheet. When all cheese pieces are coated, place baking sheet in freezer for 20 minutes.
(You can place them in a freezer bag and save for later).
Heat canola oil over medium high heat until sizzling.
Carefully add mozzarella pieces, flipping over with a slotted spoon when browned.


Only do a couple at a time, moving quickly. Its easy to let them get too hot, then they start to melt and fall apart.
Serve immediately with Marinara Sauce for dipping.
